Cauliflower (Potato) Salad

Ingredients:

  • large head cauliflower, chopped
  • 2/3 cup mayonnaise
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/3 cup onion, finely diced
  • 1/3 cup celery finely diced
  • 2 large eggs, hardboiled and chopped
  • Chives, chopped, for garnish

Instructions:
  1. Bring to boil a large pot of water.  Add a tablespoon of salt.  Add the cauliflower and simmer until tender (about 5 minutes).  Drain well.
  2. Whisk together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, paprika, sea salt, and black pepper until smooth.
  3. Stir the cauliflower, onion, celery, and egg together with the dressing.  
  4. If desired, garnish with chives and paprika.
