Roasted Potato Wedges (2 points)
Serves 4
- 2 large potatoes, cut into 8 wedges each
- 1 t. olive oil
- 2 T. spicy brown mustard
- 1 t. dried oregano
- 1 t. garlic, minced
- 1/4 c. parmesan cheese, grated
- 1 t. salt
- 1/4 t. black pepper
Instructions:
- Heat oven to 425 degrees
- In a large ziploc bag combine all of the ingredients except the potatoes. Mix well.
- Add potatoes and shake until potatoes are well-coated.
- Place the potatoes on a baking sheet that has been sprayed with oil or covered with a silicone mat.
- Bake for 25-30 minutes, turning every 10 minutes, until potatoes are tender and brown.
- Sprinkle potatoes with seasoned salt and serve hot.
