Ingredients:
- 1 can cream of chicken soup, undiluted
- 1 can cream of mushroom soup, undiluted
- 2 small tomatoes, chopped
- 1 small onion, chopped
- 1 medium green pepper, chopped
- 1/3 cup picante sauce
- 1 tablespoon chili powder
- 12 corn tortillas, 6 inch, cut in 1 inch strips
- 3 cups cooked chicken, cubed
- 2 cups shredded cheese, Colby or cheddar
- taco sauce
- sour cream
Instructions:
- Preheat oven to 350 degrees
- Grease a 13 X 9 inch baking dish
- In a bowl, combine first seven ingredients.
- In the baking dish layer half of the tortilla strips, cooked chicken, soup and vegetable mixture, and shredded cheese. Repeat layers.
- Bake at 350 degrees, covered, for 40 to 50 minutes until bubbly.
- Serve topped with taco sauce and sour cream.
