Fiesta Chicken


Ingredients:
  • 1 can cream of chicken soup, undiluted
  • 1 can cream of mushroom soup, undiluted
  • 2 small tomatoes, chopped
  • 1 small onion, chopped
  • 1 medium green pepper, chopped
  • 1/3 cup picante sauce
  • 1 tablespoon chili powder
  • 12 corn tortillas, 6 inch, cut in 1 inch strips
  • 3 cups cooked chicken, cubed
  • 2 cups  shredded cheese, Colby or cheddar
  • taco sauce
  • sour cream
Instructions:
  1. Preheat oven to 350 degrees
  2. Grease a 13 X 9 inch baking dish
  3. In a bowl, combine first seven ingredients.
  4. In the baking dish layer half of the tortilla strips, cooked chicken, soup and vegetable mixture, and shredded cheese.  Repeat layers.
  5. Bake at 350 degrees, covered, for 40 to 50 minutes until bubbly.
  6. Serve topped with taco sauce and sour cream.
