Peanut Butter Pie


A favorite of my Dad!
Ingredients:
  • 1 cup powdered sugar
  • 1/2 cup peanut butter
  • 1 pie shell, baked
  • 1/4 cup corn starch
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 cups milk, scalded
  • 3 egg yolks, beaten
  • 2 tablespoons butter
  • 1/4 teaspoon vanilla
  • 3 egg whites at room temperature
Directions:
  1. Combine powdered sugar and  peanut butter with fork.
  2. Sprinkle 1/2 mixture into baked pie shell
  3. Combine remaining ingredients except egg whites in a saucepan over medium heat until thick
  4. Pour into pie shell
  5. Beat egg whites until stiff
  6. Spread on top of pie
  7. Top with peanut butter mixture
  8. Bake at 325 degrees for 20 minutes until lightly brown
