Adapted from a recipe at Kalyn’s Kitchen
Ingredients:
- 1 onion, chopped
- 2 teaspoons olive oil
- 2 teaspoons garlic, minced
- 1 tablespoon cumin
- 2 teaspoons oregano
- 1 tablespoon chili powder
- 1/4 teaspoon cayenne pepper
- 1 package taco seasoning
- 4 cans black beans
- 1 quart broth (chicken or vegetable)
- 1 – 2 tablespoons green Tabasco sauce
- 1 cup fresh cilantro, chopped or 1/4 cup dried cilantro
- 1 cup salsa
- juice of 1 lime
Directions:
- Heat oil on high in heavy stock pot
- Saute onions until lightly brown
- Reduce heat to medium and add garlic and all the spices.
- Cook for about 2 minutes
- Using a blender, puree one can of beans including juice
- Add pureed beans and the other 3 cans of beans to the pot.
- Rinse bean cans with about 1/2 can of water each adding this to the pot
- Add the broth, salsa, green Tabasco, and cilantro to the pot
- Reduce heat to simmer and simmer for an hour or more.
- Taste and adjust seasonings before serving
