- 1 large onion, chopped
- 1 bell pepper, red or green, chopped
- 2 chicken breasts or 5 chicken tenders, cut in bite size pieces
- 1 cup medium salsa
- 2 teaspoons grated fresh ginger
- 1/2 - 1 teaspoon garlic powder or 1 -2 cloves of garlic, chopped
- 1/2 - 1 teaspoon red pepper flakes
- 1 - 2 teaspoons dried cilantro
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon red curry powder (not hot red curry)
Directions:
- Place onions and bell pepper in slow cooker.
- Place chicken on top of onions and peppers.
- Combine rest of the ingredients in a small bowl and spoon over the chicken.
- Cover and cook on low for 5 to 6 hours or until chicken is tender.
- Serve over rice.
