Smokey Cheddar Potatoes

Ingredients:

  • 4 medium potatoes, cut into 1" cubes
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons bacon, crumbled (or bacon bits)
  • 2 green onions, sliced
Directions:
  1. Place potatoes on 30X18 inch piece of heavy-duty foil.  
  2. Sprinkle with salt. 
  3. Dot with butter.
  4. Sprinkle with cheese and bacon bits.
  5. Wrap foil securely around potatoes; pierce top of foil a couple of times to vent steam.
  6. Grill over medium heat 45-60 minutes until potatoes are tender.  Garnish with green onions.
Alternatively:
Prepare in a greased casserole dish and bake at 350 degrees for 45-60 minutes until potatoes are tender. Garnish with green onions.
