Works well in the Instant Pot
Ingredients:
- 2 - 2 1/2 pounds ground meat (beef or turkey)
- 1 large onion chopped
- 1 bell pepper, any color, chopped
- 1 teaspoon minced garlic
- 1 14 - 15 ounce can crushed tomatoes
- 1 14 - 15 ounce can diced tomatoes
- 1/2 can tomato paste
- 48 - 54 ounces tomato juice
- 2 small cans Brooks mild chili beans
- 1/4 teaspoon cayenne pepper
- 1/4 - 3/8 cup chili powder
- 1/2 - 1 teaspoon baking soda
- 1/2 - 1 teaspoon sugar
- 3 - 4 dashes liquid smoke
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 Tablespoon Worcestershire sauce
Instructions:
- Brown ground meat, sprinkled with chili powder
- Add the diced vegetables and saute a few minutes
- Add the rest of the ingredients.
- Simmer at least an hour.
- Adjust seasonings to taste.
- This recipe fits in a 6 quart instant pot. It can be slow cooked for hours or pressure cooked for about 10 minutes and then kept warm for hours.
