Small Batch Dad's Chili

Based on Dad's recipe
Works well in the Instant Pot

Ingredients:

  • 2 - 2 1/2 pounds ground meat (beef or turkey)
  • 1 large onion chopped
  • 1 bell pepper, any color, chopped
  • 1 teaspoon minced garlic
  • 1 14 - 15 ounce can crushed tomatoes
  • 1 14 - 15 ounce can diced tomatoes
  • 1/2 can tomato paste
  • 48 - 54 ounces tomato juice
  • 2 small cans Brooks mild chili beans
  • 1/4 teaspoon cayenne pepper
  • 1/4 - 3/8 cup chili powder
  • 1/2 - 1 teaspoon baking soda
  • 1/2 - 1 teaspoon sugar
  • 3 - 4 dashes liquid smoke
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 Tablespoon Worcestershire sauce
Instructions:
  1. Brown ground meat, sprinkled with chili powder
  2. Add the diced vegetables and saute a few minutes
  3. Add  the rest of the ingredients.  
  4. Simmer at least an hour.
  5. Adjust seasonings to taste.
  6. This recipe fits in a 6 quart instant pot.  It can be slow cooked for hours or pressure cooked for about 10 minutes and then kept warm for hours.
