Bean Soup

 From the kitchen of: Grandma Alberta Smith, modified by Linda Smith for the Instant Pot using Instant Pot Ham Bone Bean Soup Recipe by #iwashyoudry!


Ingredients:

  • 1 package dried white beans (Navy or Great Northern)
  • Ham bone
  • 1 large sweet onion, chopped
  • 4 - 5 stalks celery, finely chopped
  • 1 1/2 cups chopped carrots, optional
  • 1 can diced tomatoes
  • 4 - 6 cups chicken broth or water
  • 1 Tablespoon minced garlic, optional
  • 1 teaspoon cumin, optional
  • 1/2 teaspoon salt, or to taste.
  • 1/2 teaspoon pepper, or to taste
  • 2 bay leaves, optional
Instructions:
  1. Combine all ingredients in the instant pot.
  2. Set to High Pressure for 50 minutes.
  3. Let pressure release naturally for 30 minutes, then quick release.
  4. Remove ham bone and shred any meat to return to the Instant Pot.
  5. Discard ham bone, cartilage and bay leaves.

Note: Optional ingredients were not part of Grandma's original recipe. Poppy wouldn't let her use garlic!

Apple Syrup

Adapted from AllRecipes

Ingredients: 

  • 2 tart apples, cored and sliced or chopped (may be peeled)
  • 1/2 cup white sugar
  • 1 teaspoon ground cinnamon
  • 2 T water 
  • a little lemon juice

Directions:
  1. In a saucepan, combine apples, sugar, cinnamon and water. 
  2. Stir to dissolve sugar. 
  3. Bring to a boil. 
  4. Reduce heat to low and simmer for 10 minutes or until apples are soft. 
  5. Squeeze in a little lemon juice.  
  6. If syrup is too thick add a little water until desired consistency.  
  7. Serve over pancakes.

Makes 2 to 4 servings.

Chicken Wing Soup - Carol

Carol's recipe

Does not contain wings.


Ingredients:

  • 3 chicken breasts, shredded
  • 6 cups chicken stock or broth
  • 1 cup chopped celery and onions, sauteed in butter
  • 1 cup sour cream
  • 3/4 cup Franks Hot Sauce
  •  2 cans cream of chicken soup
Directions:
  1. Cook chicken in broth. Shred when cooked
  2. Add sauteed onion and celery.
  3. Add sour cream and about 3/4 cup of Franks hot sauce and cans of soup.
  4. Serve with a dollop of blue cheese dressing.

Super Sloppy Joes

Ingredients

  • 1 T olive oil
  • 1 1/4 pounds  ground beef
  • 1/4 cup brown sugar
  • 2 - 3 t Montreal Steak seasoning
  • 1 medium onion
  • 1 small red bell pepper
  • 1 T red wine vinegar
  • 2 cups tomato sauce
  • 2 T tomato paste

Directions:
Brown ground beef in olive oil is large skillet.
Combine brown sugar and steak seasoning and add to the skillet
Once the meat is brown, add the chopped onion and chopped bell pepper.
Reduce heat to medium and cook onion, bell pepper, red wine vinegar, and Worcestershire sauce with the meat for 5 minutes. Add the tomato sauce and tomato paste, reduce to simmer and simmer for 5 minutes more.
