Yields about 4 dozen cookies.
Ingredients:
- 1 3/4 sticks butter, softened
- 3 /4 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup raisins
- 3 cups quick or old fashioned Quaker Oats
Instructions:
- Preheat oven to 350 degrees.
- Beat butter and sugars on medium speed of electric mixer until creamy
- Add eggs and vanilla and mix well
- Add combined flour, baking soda, cinnamon, and salt, mix well
- Add raisins and oats, mix well.
- Drop dough by rounded tablespoon onto ungreased baking sheets.
- Bake 8 to 10 minutes until light golden brown.
- Cool slightly on cookie sheet, then remove to wire rack or parchment paper to cool completely.
- Store tightly covered.
