Luscious Lemon Bars

Ingredients:

  • 1 1/2 cup flour
  • 2/3 cup powdered sugar
  • 1/2 teaspoon salt
  • 3/4 cup cold butter
  • 3 eggs
  • 1 1/2 cup sugar
  • 3 tablespoons flour
  • 1/3 cup lemon juice
  • 2 tablespoons grated lemon rind

Directions:
  1. Cut cold butter into mixture of flour, powdered sugar and salt until fine crumb texture.
  2. Press evenly into the bottom of a greased 9X13 inch pan
  3. Bake approximately 20 minutes at 325 degrees.
  4. Beat eggs; add sugar, 3 tablespoons flour, lemon juice, and lemon rind; mix well.
  5. Pour lemon mixture over hot crust. 
  6. Increase oven temperature to 350 degrees; bake 20 minutes until golden.
  7. Sift powdered sugar onto bars while hot.  
  8. Cool; cut into small squares.
  9. Store in refrigerator.
